“Life is great, but bread and cheese make it better.”
I think bread has been one of my genuine loves (or probably I should say loaves, but I am just too scared of the pun police!). I have certainly had dreams about bread, bread buffets and cravings that some would say are just too irrational. Even just a plain buttered multigrain toast could be my comfort food. And yet there is no reason to not dress up for this party sometimes. So here’s something that I know is a favorite of many at restaurants, but wanted to make a homemade version so that I could devour it whenever I wanted – Chilli Cheese Toast.
RECIPE
For 1 bread-lover.
INGREDIENTS
- 2 slices of bread (any variety as preferred)
- 50 grams of Amul cheese (or as preferred)
- 1 capsicum, medium, finely diced
- 1 green chilli, finely chopped
- 1 teaspoon coriander, finely chopped
- 1 teaspoon Italian seasoning
- 1 teaspoon red chilli flakes
METHOD
- Slightly toast the slices of bread on a dry, hot pan, on both sides.
- Once a little crisp and golden brown, combine the capsicum, chilli and coriander and top the bread slice.
- Then grate over half the cheese on each bread slice and cook on a low flame until the cheese has melted.
- Once gooeyly melted, remove from the pan, top with Italian seasoning and chilli flakes, and cut on a diagonal for spiky shards of toast.
- Serve with condiment of your choice.
ADDITIONAL NOTES
- Coriander is optional if not liked/not found. Any other herb of choice could be added as well.
- You could also do this in microwave by topping the bread with everything and cooking it in one go.
